Father's Day

Happy Father's Day to the best Daddy I could have ever dreamed of for our little boy!

We woke up Michael with  big yummy breakfast in bed. (note to self--get a pretty tray for occasions such as these for the future!) Bryson thought it was so silly to bring food into the bedroom!

Bryson gave him an IOU for a Maverick's championship t-shirt (the only size I could find in a shirt I like was a 3XL)


I always knew Michael would be a wonderful Daddy, but he has blown me away with his loving heart and sweet, calm spirit with Bryson. He is the sweetest, silliest, most loving man. Bryson LOVES his daddy. He does every.single.thing. that Michael does...


Put on deodorant- check!

Get geared up to go running- check!

Watch sports- check!

Eat like a big boy- check!

These are just a few of the things. Believe me. He is very much a Daddy's boy ;)  I am 100% ok if Bryson grows up to be exactly like his daddy.

We went to Michael's parent's for a Father's Day dinner.
How many Fants does it take to grill burgers? :)


We also had homemade mint chocolate chip ice cream. YUM!!


Happy Father's Day to my dad, too! It was strange not being able to celebrate Father's Day with him this year, but they were in Alaska. :)

Recipes!

Here are the recipes for the delicious things Michael cooked this weekend!

It's not as hard as it looks/sounds. They took about 35-40 minutes together. YUMM YUMM!!


Grilled Chicken with Basil and Mozzarella

8oz mozzarella cheese
4lg chicken breasts
8 basil leaves
2 garlic cloves, thinly sliced
1 Tbs olive oil
salt & pepper

Cut mozzarella into 8 thick slices, set aside.

Slice each chicken breast horizontally without cutting all the way though (butterfly the chicken). Open the chicken and season wih salt and pepper.

Put 2 basil leaves, a few garlic slices, and 2 slices of cheese in each breast, then fold back over, pressing firmly together. Secure with toothpicks.

Brush with olive oil and cook on grill or grill pan for about 8 minutes or until the chicken is cooked and the cheese is oozing.


Linguine with Pancetta & Sage

1 cup peas
4-5 Tbs olive oil
1/3 cup bread crumbs
16 oz linguine
3 oz thinly sliced panchetta
3 garlic cloves, crushed
5-6 sage leaves, finely chopped
1/3 cup white wine
1/4 cup parmesan cheese

Cook peas, drain and set aside.

Heat 2 tablespoons of oil in skillet. Add bread crumbs and cook until golden brown, about 3 minutes. Set aside.

Cook pasta and drain. Set aside.

Heat 1 Tbs oil in a saucepan large enough to hold all the pasta later. Add the pancetta and cook, stirring, until browned, about 2 minutes. Add garlic and cook, stirring for 1 minute, don't let the garlic burn. Stir in sage and wine. Cook, stirring, until liquid has evaporated, about 1 minute.

Add pasta to the pan with the pancetta. Add the peas and 1-2 tablespoons of oil over low heat. Toss well to mix. Stir in cheese and bread crumbs.

Someone's in the Kitchen with Kristin

Every once in a while, Michael will cook dinner, but I'm usually the one one that does the cooking in the house. Lately, we haven't been cooking at all because we've been blessed with some amazing friends and family that have been brining us meals since we came home with baby boy.

Last night, we had Ray and Alicia over for dinner and we actually decided to cook! Michael and I started cooing the meal together, but I had to keep running between the food and the baby. Between feeding, changing, comforting, and changing more diapers, Michael ended up cooking dinner by himself. And it was delicious!! 




He made Stuffed Chicken with Basil and Mozzarella, Linguine with Panchetta and Asparagus. YUMMY!!!!

Yummy Yummy!



This was Michael's favorite meal for a long time while we were engaged and newly married. I hadn't made it in a while, so I decided it was time to bring out Emeril's recipe again :) I forgot how much I like it. I even ate it for breakfast this morning! (Yuck, I know. But it was good!)

It's Emeril's Turkey Lasagna
***It might sound like a lot of work when you read it, but I actually made it again tonight to take to a friend and it took about an hour including bake time!
Recipe:
12oz of ground Turkey (or beef if you want)
3T Dried Minced Onion
2 cloves chopped Garlic
1 14 1/2oz can Diced Tomatoes
1 8oz can Tomato Sauce
1 T Italian Seasoning
6 Lasagna Noodles
1 beaten egg
1 15oz pkg Ricotta Cheese
Parmesan cheese
Mazzarella cheese

Cook meat, onion and garlic in lg pan then Stir in undrained tomatoes, tomato sauce and Italian Seasoning. Cook another 15 mins, stirring occasionally.
Cook noodles, drain well and set noodles aside on a flat surface
For Filling: Combine egg and ricotta

In a 9x13 lasagna (or Pyrex) dish, spread 1/2 cup of meat sauce on bottom of dish. Lay 3 noodles side by side. Spread 1/2 of ricotta mixture on noodles and top w/ 1/2 of sauce. Repeat layers and top with desired amount of mozzarella and parm cheess. I pile on the cheese and even put it in between the layers. I loooove cheese!!
Bake at 375 fo 30-35 mins and ENJOY!!
